Petite-yet-airy with marble surfaces and white walls, this is exactly the kind of cafe and bar that makes us want to move into the neighborhood. It’s open all day, but we’re here for the cocktails. Try the brandy-based Gay Republican with spiced brown butter and apple flavors; the whiskey-based Recovery Pod with beet cordial, sesame, oil, matcha, and egg white (somehow, it works!); or the creamy, frothy Tonka Puff featuring VT gin, orange flower water, and the forbidden tonka bean.

If you’re hungry, order the Grilled Cheese and Tomato Soup—oozing with gruyere, Parmigiano Reggiano, and local Colby and cheddar—or a plate of the savory-sweet Trout Donuts. Then order a chocolate cake or chocolate chip cookie to sample the stellar dessert selection overseen by the spot’s pastry chef co-owner. And if you prefer your confections laced with cannabis, head to the counter to snag one of the inventive truffles laced with CBD (and sometimes THC) in creative flavors like Strawberry Blonde (made with local berries) and the Evergreen Bud (containing pine and conifer, menthol, and chocolate).
