Given her engineering degree from MIT, it’s safe to say that Milena Pagan has the smarts to pursue countless career paths. Fortunately for Providence’s breakfast game, her passion lies in making bagels. The craveable, cold-fermented rounds Pagan sells at her cheery corner shop are a cross between the New York and Montreal versions, and are served slicked with out-of-the-box spreads (think a house-made lemon and kalamata olive vegan cashew cream “cheese” or a savory-sweet dairy version with honey, miso, and garlic). Also try the Pizza Bagel, egg sandwiches, and super flaky gourmet pastries.
