Husband-and-wife team Michael and Orla LaScola fuse their long-time relationships with local farmers and penchant for global fare to thrilling effect at The Proprietors. The cozy space—with its exposed beams and brick fireplace—puts you at ease the moment you step foot into what feels like the couple’s home. The pair ran American Seasons—an island favorite for its regional American cuisine—for 10 years before selling it to chef Neil Ferguson in 2015. Michael’s constant menu innovation and way with unconventional cuts of meat lead to showstopper small plates like a warm split marrow bone topped with beef tartare, egg yolk jam, and a billowing puffed tendon crown. If offal isn’t your thing, make a meal of the Carrot Hummus with dukkha spice and chewy naan; unassuming Fried Broccoli that’s a sleeper favorite with crunchy peanuts and sweet-hot honey sambal olek; and springy Rye Cavatelli rich with brown butter, currants, and cauliflower. Wash it all down with one of Orla’s picks—she’s the somm, too—or take your pick from one of the island’s best craft cocktail lists.
