If you’re in a dither about which wines to serve for Thanksgiving, take a deep breath. The holiday—with its tumble of dishes and amalgam of traditions—has never lent itself to course-by-course wine pairings, so opt for a strategy that allows everyone (including yourself) to enjoy the evening. Offer a lively white and an appetizing red, both versatile enough to play nicely with everything on the table, then share a special libation over dessert. Uncork this trio, and even your pickiest relatives will think you’re a hero.

The bottle: Vina Skaramuča Pošip 2017

The wine in words: Hailing from an island off of Croatia’s Dalmatian Coast, this delectable white is crafted from pošip (pronounced “po-ship”), an indigenous grape. Ripe and aromatic on the nose, this platinum-hued pour expresses peachiness, pink grapefruit, and a whiff of green herbs, leading to a zippy palate of Meyer lemon that’s punctuated by an attractive salty tang.

The bottle: G.B. Burlotto Verduno Pelaverga 2017

The wine in words: When the great-great grandson of famous Barolo producer Giovan Battista Burlotto assumed the role of winemaker at his family’s winery in Italy’s Piedmont, wine enthusiasts the world over rejoiced. This young, vibrant red, made from grapes grown in Verduno, is made from pelaverga, historically a blending varietal. A ruby-hued beauty, generous with scents of Bing cherry and violet potpourri, it offers a mouthful of cherry, saline, and crunchy red plum, all balanced by a whisper of appetizing bitterness.
Pair like a pro: This red cozies up easily to dark meat turkey and baked salmon.

The bottle: El Maestro Sierra Amontillado, Vejez 12 Años

The wine in words: If you think of sherry as a sweet, old-timey drink of your grandmother’s generation, you’re in for a surprise. Like all sherry, this middle-weight style, called amontillado, hails from a specific region in southwestern Spain. Palomino fino grapes are made into wine that spends time under flor, a layer of naturally occurring yeast. When that yeast dies, oxygen enhances nutty-savory flavors. Fortified with neutral grape spirit, this wine is aged for 12 years in a series of barrels called a solera system. Butterscotch in color, with dried pear and marzipan aromas, the satiny libation is dry, communicating flavors of toasted almond, umami, and brine.
Pair like a pro: It’s terrific with cheddar cheese, or as a bracing palate cleanser between bites of pecan pie.
