Brave the Caves: An Underground Cheese Lesson
Did you know that the stone caves underneath Formaggio Kitchen’s Cambridge store contain hundreds of pounds of cheese? You can find everything from small logs of Belgian goat cheese aged in-house to 80-pound wheels of Comté. Tag along on a spelunking adventure with the retail shop’s pro cheesemongers, to learn about how these underground temperature and humidity-controlled rooms impact the aging and maintenance of cheese (while tasting some samples, of course).
